Miso Soup with Tofu and Wakame
Ingredients (Good for 1 person)
Momen Tofu (hard tofu) ー1/4 block
Dry cut wakame (sea mustard) ー1 teaspoon
Spring onion ーabout 3 inches
Water ー1 cup (200cc)
Hondashi (Japanese soup stock) ー1/3 teaspoon
Miso paste ー2 teaspoon
Preparation:
① Cut tofu into small squares (about 1.5 cm). Cut also the spring onions into small pieces (about 2mm wide).
② In a pot, mix the water and hondashi and boil it under medium heat. Once it starts boiling, add the tofu and boil it for 1 minute.
③ After 1 minute, gradually add the miso paste into the mixture. Stir to mix well. Finally, add the spring onions and boil for 20 seconds. Mix well and serve in a bowl.
